Garlic Ginger Chicken with Spinach and Bell Peppers

- 12 oz ground chicken breast
- 1 tbsp ginger, minced
- 1 tbsp garlic, minced
- 1 cup of spinach
- 1 bell pepper, diced
- 1 tsp of salt
- 1/2 tsp of black pepper
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 1 tbsp of mirin (Japanese sake) OR substitute 1 tbsp of white wine with 1 tsp brown sugar
- Add olive oil to sauce pan and bring to medium heat. Add garlic and ginger, cook until you smell aroma. Turn to medium-high heat, add chicken with salt and pepper and cook to golden brown. Add spinach and bell pepper, then add soy sauce and mirin.
- You may pair this dish with some lightly boiled broccoli, green beans or asparagus on the side.
