Staying on Purpose
Living a healthy lifestyle does not mean it has to be hard or involve sacrifice, “discipline,” or the inability to have fun! However, some may have that misconception and it may inhibit them from pursuing their health goals. It’s perfectly normal to wonder how one might navigate holidays, birthdays, vacations and other activities that seem to be centered around eating.
You can absolutely “stay on purpose” when it comes to what’s important to you! Surrounding yourself with like-minded individuals is a great place to begin for we are most influenced by the five people closest to us. When those five people are positive, supportive people living a healthy lifestyle, they not only tend to rub off on us but we tend to find it easy to stay on purpose. Sharing recipes, cooking healthy meals together, walking or exercising together offers support, camaraderie and fun. Belonging to a supportive community of like-minded people is fun and important.
Not everyone in your life may be living a healthy lifestyle, but this gives you an opportunity to be a good influence. You can also set yourself up for success by selecting restaurants with healthy choices, looking at the menu on-line ahead of time, staying true to your exercise schedule, offering to bring a healthy dish when invited to friends’ for dinner. Staying true to your goals doesn’t mean you have to miss out on fun. Living a healthy lifestyle IS FUN!! And, who knows … you might have that opportunity to share your healthy lifestyle with others!
Cilantro Lime Cauliflower Rice
· 1 medium head cauliflower, rinsed
· 1 tbsp. extra-virgin olive oil
· 2 garlic cloves
· 2 TBL scallions, diced
· ¼ tsp kosher salt and ½ tsp. pepper, to taste
· 4 TBL lime juice
· 1/4 cup fresh chopped cilantro
Remove the core and let the cauliflower dry completely. Coarsely chop into florets, then place half of the cauliflower in a food processor and pulse until the cauliflower resembles rice – don’t over-process or it will get mushy. Set aside and repeat with the remaining cauliflower. Heat a large sauté pan over medium heat, add olive oil, scallions and garlic and sauté about 3 to 4 minutes, or until soft. Raise the heat to medium-high. Add the cauliflower “rice” to the sauté pan. Cover and cook approximately 5 to 6 minutes, stirring frequently, until the cauliflower is slightly crispy on the outside but tender on the inside. Season with salt and pepper to taste. Remove from heat and place in a medium bowl; toss with fresh cilantro and lime juice to taste.
Makes 4 servings. Per Serving:
· 3 Green servings
· ¾ healthy fat
· 3 condiments
