- 8 cups baby spinach leaves
- 1 pint fresh Florida strawberries, hulled and sliced
- 1/2 cup chopped pecans
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
For the dressing:
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the baby spinach, sliced strawberries, chopped pecans, and thinly sliced red onion.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss to coat.
- Sprinkle the crumbled feta cheese on top of the salad and serve immediately.
