Florida Strawberry Spinach Salad

Ingredients

  • 8 cups baby spinach leaves
  • 1 pint fresh Florida strawberries, hulled and sliced
  • 1/2 cup chopped pecans
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the baby spinach, sliced strawberries, chopped pecans, and thinly sliced red onion.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  3. Drizzle the dressing over the salad and toss to coat.
  4. Sprinkle the crumbled feta cheese on top of the salad and serve immediately.
