the Benefits of Pilates

Have you ever tried Pilates? This incredible workout is a system of mind-body exercises that teach body awareness, good posture, and easy, graceful movement. Many of us are unaware of how we sit, stand, and move. Developing personal awareness enables you to relate your habits and posture to the aches and pains you experience regularly, and then put them to an end. Pilates works on building core strength for a stronger, healthy back and body. While practicing Pilates, your mind is trained to create symmetry and coordination in your body. You develop an awareness that brings focus to your body and posture as you go through daily life. If you haven’t tried Pilates, here are some reasons to consider adding it to your routine:
Mind-body awareness – By emphasizing proper breathing, correct spinal and pelvic alignment, and concentration on smooth, flowing movement, you become acutely in tune with your body and learn how to control its movement.
Gain long, lean muscles and flexibility – More conventional or traditional workouts are weight bearing and tend to build short, bulky muscles – the type most prone to injury. Pilates elongates and strengthens, improving muscle elasticity and joint mobility. A body with balanced strength and flexibility is less likely to be injured.
Create an evenly conditioned body, improve sports performance, and prevent injuries – Pilates conditions the whole body, even the ankles and feet. No muscle group is over trained or under trained. Your entire musculature is evenly balanced and conditioned, helping you enjoy daily activities and sports with greater ease, better performance, and less chance of injury.
It is gentle – Many of the exercises are performed in reclining or sitting positions, and most are low impact and partially weight bearing. Pilates is so safe that it is used in physical therapy facilities to rehabilitate injuries.
It is challenging – Pilates is an extremely flexible exercise system. Modifications to the exercises allow for a range of difficulty, ranging from beginner to advanced. Get the workout that best suits you now, and increase the intensity as your body conditioning improves.

Baked Eggplant Sandwich

Ingredients:
* 1- 10 oz eggplant, cut into 10 slices
* 4 oz/100 gr low fat Provolone cheese (or low fat sharp cheddar), sliced
* 4 sun-dried tomatoes
* ½ cup fresh parsley, chopped
* 1 packet Medifast crackers, crushed
* 4 tablespoons Parmesan-Reggiano cheese, grated
* 1 egg
* 5 teaspoons olive oil
* 1 teaspoon fine grain sea salt
* ½ teaspoon ground pepper to taste
Directions:
Fill a large bowl with cold water and add 1 teaspoon of salt. Stir until the salt dissolves completely. Slice the eggplant into rounds about ¼-inch thick and place them into the bowl of water. Let the eggplant rounds sit for at least 20 minutes to draw out the bitterness. Fish them out of the water and pat them dry with paper towels.
Preheat oven to 375°F (200°C) and place a rack in the middle. Line a baking sheet with parchment paper and lightly grease with 1 tablespoon of olive oil. Place the eggplant rounds on a flat surface, lining them up in rows with like-sized paired together. Cover half of the eggplant rounds with slices of cheese. Top with sun dried tomatoes, sprinkle with parsley, and season with salt and pepper. Make the sandwiches using the other eggplant slices. In a small bowl, crush the Medifast crackers and mix in the Parmesan-Reggiano cheese. In another bowl beat the egg.
Take one sandwich at a time, gripping it firmly in the center to hold it together. Dip the sandwich in the beaten egg, making sure it is completely covered on all sides with a thin layer of egg. Immediately dip the sandwich in the Medifast cracker and cheese mixture, making sure to coat the sides and edges evenly (it doesn’t have to perfect though). Place the sandwich on the greased baking sheet. Repeat procedure with all sandwiches.
Bake in the oven for 35 to 40 minutes, flipping once at the 20 minutes mark, until the sandwiches are golden on both sides.
Health Makes a Difference

I’m so proud of Scott, who has lost 30 lbs and kept it off! This guy suffered from knee pain to the point that he could barely go shopping. Now he has no complaints about his knees! How rewarding that he chose health and wholeness in all areas of his life! He loves being able to move around with ease and keep up with his grandkids!!
