Bell Pepper Nachos
- Yield: 1 Serving
▪️1 cup mini bell peppers with ends cut off and then sliced lengthwise (2 Greens)
▪️1/2 cup combination of tomatoes and jalapenos chopped (1 Green)
▪️3.3 oz 85% to 94% lean ground beef, cooked (2/3 Lean)
▪️1/3 cup 2% reduced fat shredded Mexican style cheese (1/3 Lean)
▪️Optional: 1 tbsp of 2% plain Fage Greek yogurt (1 Condiment)
Cut the ends off of the mini bell peppers and then cut lengthwise. Remove seeds and rib. Set aside.
I had a pound of ground beef that I cooked with low sodium taco seasoning and then weighed out my 3.3 oz of beef. You must count any seasonings you use as condiments. 1 1/2 tsp of taco seasoning per 5 oz of this particularly cooked meat is 3 Condiments. Put the ground beef inside each mini bell pepper. Sprinkle with cheese, Broil for 5 min or until cheese is melted. Remove from oven and top with chopped tomatoes and jalapenos. I added 1 tbsp of Fage Greek yogurt as a garnish.
*You can always use 1 1/2 cups of mini bell peppers if you want to leave out the tomatoes and jalapenos as 3 Greens. I just wanted to add a little variety. I also used more tomatoes than jalapenos. Just go with what you like.
1 Serving with 1 Lean, 3 Greens, Condiments will vary depending on what seasonings you use for your beef but keep it under 3 for the day and no Health Fat required
