Recipe: Chicken Broccoli Dijon Lean and Green

This is a classic Medifast recipe that Stacey Hawkins created and it was used in one of the very first Medifast Cookbooks. Here is her recipe with a slight twist she added. A sublime, quick and easy meal you can enjoy as a weeknight meal or Sunday Dinner.



1 T Dijon mustard

1 T whole grain mustard

1 C low-sodium Chicken broth

4 tsp Stacey Hawkins Roasted Garlic Oil (or fresh garlic & oil)

4C broccoli florets, fresh

1 T Stacey Hawkins Garlic Gusto Seasoning (or fresh crushed garlic, parsley, lemon and onion)

lb boneless, skinless chicken breasts

Pinch Stacey Hawkins Dash of Desperation Seasoning (or salt, pepper, onion, garlic and parsley)


Whisk together mustard and broth in a bowl, set aside.

In a large frying pan (with lid), heat oil over medium high heat. Add broccoli and season with Garlic Gusto. Cook for approx. 2 minutes, stirring broccoli to coat it in the oil and seasoning.

Pour broccoli into a bowl and set aside.

Place the pan back over the heat and add the chicken, browning it on each side for 4-5 minutes.

Reduce heat to medium. Pour chicken broth & mustard mixture over the chicken.

Add the broccoli and cover the pan with a lid. Let simmer for 5-7 minutes, until chicken is thoroughly cooked and broccoli is bright green & tender crisp- not overcooked.

Remove from heat and serve hot. Season with Dash of Desperation for additional flavor.
