Savory Salad with Red Cabbage and Pineapple

Red cabbage is packed with benefits since it contains the anthocyanin that make red wine and red grapes so healthy. Many people do not like the taste of red cabbage, but with the addition of the sweet, bromeliad-rich pineapple, you may love this. We do!



  • 1/2 head red cabbage (4 cups , max.)
  • Pinch of sea salt (optional)
  • 2 cups of pineapple, cubed
  • 1 tbsp olive oil
  • 2 tbsp apple juice
  • 1 tbsp apple cider vinegar
  • 1 oz chives, chopped
  • Pepper to taste
  • 1/2 tsp cumin


  • Remove any ugly leaves from the cabbage and chop into small pieces. Please in a bowl and add the sea salt, mixing well. Let it rest a few minutes, allowing it to “sweat.”
  • During this time, cut the pineapple into small squares. Add to the bowl with the red cabbage.
  • Mix the vinaigrette in a small bowl by whisking the olive oil, juice, vinegar, chives, pepper, and cumin.
  • Pour on top of the cabbage and pineapple, and mix well.
